sauerkraut and variants


Sauerkraut is one of those things that had me all baffled - until I figured out the ratio.

100% cabbage, around 2% salt, and about 0.5% flavorings (spices) and 1 garlic clove.

Ingredients
450 grams cabbage
1 large carrot
10 grams salt per 450 grams cabbage
1/2 teaspoon caraway seeds per 450 grams cabbage
1/2 teaspoon mustard seeds per 450 grams cabbage
1 garlic clove per 450 grams cabbage, bruised then chopped.

Chop finely and prepare in the usual manner.  Ready in about a week.


Variants 1.

1 small red beets finely grated
1 whole carrots finely grated
1 Tablespoon fresh ginger grated
1 Tablespoon fresh tumeric grated
1 clove garlic, bruised then chopped
