Left over from the daughters wedding in January, I saved this champagne from a couple of bottles I found during cleanup. At least some came from.a.bottle I found at the top table. Considering this champers was open in January and it's now nearly June I can forgive it having a slight bready-ness on the nose. Three months and we will see. These jewels are headed to the dehydrator for a couple of hours and then I can finally try. Can't wait for Sunday brunch when I can finally grate these cured yolks over something special. My fingers are crossed. #homemadeisbest #homemade #curedeggyolks

Finally brunch time. Deb made the sourdough which is hiding underneath the mushrooms, mushrooms harvested last night so fat and tight, bacon had hints of thyme and juniper and the fat was crispy and delicious. Lamb and thyme sausages were a last minute addition but a good idea so sausage making for next time. Well worth the time and effort @darrylrobinson3512 @weezamax #homemadeisbest #brunchmunch #imadebacon

Finally brunch time. Slicing the bacon after an 8 hour rest in the fridge. The fat is thick, well set and Fry's up crispy. The thy.e and just super compliment the perkiness perfectly and tlwhile cooking the fat renders so well. Be good in a vinaigrette. Hmmm. @weezamax #imadebacon #icookinagaggenau #homemadeisbest

After a week in the fridge the bacon is in the oven. Slow cooking for a few hours then a rest in the fridge and then ready for slicing tomorrow. Smelt amazing as I was rinsing the brine off.
